Very Easy Banana Bread

 
Banana Bread

Buying produce is like playing Russian Roulette sometimes. For days on end, it can go extremely well for you and your fruits and veggies will stay perfect. Other times, by the first try (day), you are S.O.L. Honestly, if there were classes to teach me how to pick fruit that is not only ripe when I want to use it, but fruit that stays OK for days and days, I would pay big money to learn. Alas, I do not have this magical power and always waste some kind of food, about every week. It truly makes me feel bad to waste food, but sometimes I get way too ambitious at the grocery store and think I'll make more than I do.

This week, it was bananas that were my most recent food victims. I bought five bananas, and only ate one out of the bunch before they started spotting. They still smelled really good, and I haven't baked in a while, so I decided to make simple banana bread. Banana bread can be prepared in seriously under 10 minutes, so while I was cooking tacos for tonight, I also was making the banana bread mixture at the same time. I found the recipe by typing in "best soft banana bread" in Google, and found this. The recipe I used was fairly similar, except I made my own substitution for buttermilk, and I also used more banana.

This recipe was simple, easy, and didn't take any time to prepare. And it turned out tasting like a delicious explosion in my mouth. Banana bread is great not only for dessert, but also is just as good as a late night snack, or even eaten as an easy breakfast (if you have a slice- NOT the whole thing). A great item to make when you are feeling like something sweet, but you don't want to spend your time or energy on making anything extravagant.

Ingredients:

2 eggs, beaten
3 very ripe bananas 
1/3 cup buttermilk (which I didn't have, so I combined 1/3 cup milk and 1 tablespoon of lemon juice, combined and let sit for 5 minutes)


 1/2 cup canola oil
1 1/2 cups white sugar
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup semi-sweet chocolate chips

Directions

1. Preheat oven to 325 degrees. Spray one 9x5 inch loaf pan with non-stick spray
2. Blend together the eggs, milk with lemon juice, oil, and bananas
 3. Sift together the sugar, flour, baking soda and salt. Add to banana mixture and stir in walnuts and chocolate chips. Mix well


4. Pour into prepared loaf pan and bake 1 hour and 20 minutes, or until you can stick a knife in and pull it out clean
