Chewy Oatmeal Cookies

I have just been in a mood recently. I don't know what sparked my cooking interest again a few months ago, but I am running with it. It is just so satisfying to me that even if I can't consider myself to be a full on adult, I know I can feed myself. I don't know if there will ever be any case in which I would have to solely survive just through my cooking skills, but if there were ever a zombie apocalypse and I was stuck in a house for days on end, I would still make bomb meals. I have no idea what I am actually talking about, and this has nothing to do with cookies.

I originally wanted to make an almond cake, but I didn't have the correct ingredients for that. I wanted to bake something, so I knew I would have to work with the baking ingredients that I had in my baking "staples" cabinet. This included chocolate chips, oats, flour, baking soda...the main players. I only had 1 egg in my fridge, so Riley had a mission to find a recipe online that only required 1 egg. He found one, and we decided to go with this recipe. It was easy, took little time (some recipes called for 2 hours...ummmm I want cookies NOW. Like, right after dinner), and yielded more than a dozen cookies, which was enough to bring extras to work.

Ingredients:

3/4 cup unsalted butter (6 tablespoons), room temperature
1 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
3/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 cups old-fashioned rolled oats
Parchment paper (a staple you should have in your kitchen if you like to bake at all)

Directions:

1. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper
2. In a large bowl, beat butter and sugar until creamy and smooth with a hand mixer, or just vigorously yourself. Again, whatever floats yo boat. If you don't have any kind of mixer, your arm strength should be fine. Unless you are a weakling, in which case just ask your roommate or significant other to finish the job for you


3. Add the egg and vanilla extract and beat to combine


4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon


5. Add flour mixture to the creamed mixture and beat until incorporated. Stir in the oats and chocolate chips


6. Use 1 tablespoon, roughly, of the batter to make small-medium sized cookies. If you want them bigger, you can use 1/4 cup of the batter. Spread the cookies about 1 inch away from each other on the baking sheet. Then wet your hand and flatten the cookies slightly with your fingers, so that they are about 1/2 inch thick


7. Bake cokies for about 12 minutes, or until light golden brown but still soft and a little wet in the centers
8. Remove from oven, and let sit for a few minutes on the baking sheet. Yum!
