One Pot Black-Eyed Pea Stew with Kale and Sausage


Sup y'all, Anders checking in again.  We have had a rainy few days here in B-Town, and what goes better with rainy days than a big ole pot of stew?  Even better, a big ole pot of stew that requires minimal dishes!  A smokey, satisfying mess of sausage, beans and greens that pairs perfectly with the Grateful Dead's classic show from 1977 at Raceway Park in Englishtown, New Jersey and Campari spritzes.  Cue those jams up, pour one up for yourself and pour one out for JERRY!

Ingredients:

1 tablespoon extra-virgin olive oil
12 ounces andouille sausage, cut into 1/4 inch slices
6 ounces thick cut or slab bacon, cut into 1/2 inch pieces
2 large shallots, finely chopped
2 pieces of green garlic, white and light green parts only, roughly chopped
1 large onion, finely chopped
2 stalks celery, finely diced
1 large yellow bell pepper, finely chopped
1 jalapeño pepper, minced and seeded
1/2 teaspoon red pepper flakes
3 medium cloves garlic, thinly sliced
2 bunches kale, stems removed, leaves roughly chopped
1 pound dried black-eyed peas
2 quarts low sodium chicken stock
2 bay leaves
Kosher salt and freshly ground black pepper
Crystal Hot Sauce, the King of Hot Sauce, to finish

Directions:

1. Heat olive oil in a large Dutch oven over medium heat until shimmering. Add sausage and bacon and cook, stirring occasionally, until lightly browned on all sides, about 12 minutes. 


Add shallots, onion, celery, pepper, jalapeño, pepper flakes, green garlic and garlic and cook, stirring and scraping up browned bits from the bottom of the pan until softened and lightly browned, about 10 minutes.  You should be through one Campari spritz at this point, time for a refill.




2. Stir in kale, cover, and cook until kale starts to wilt, about 3 minutes. Uncover, stir, and continue to cook uncovered until kale is completely wilted, another 5 minutes.  Briefly pause to play along on air guitar to the solo in "Bertha".  WHOO!


3. Add peas, chicken stock, and bay leaves. Season lightly with salt and pepper. 


4. Add water as necessary until beans are completely covered. Bring to a boil, reduce heat to low, cover, and cook until beans are completely tender, 45 minutes to 1 hour 30 minutes.  Guess what?  Time for another spritz and time to just chill with Jerry and the Boys while that bubbles away.   


5. Season that bad boy to taste with salt and pepper, finish with some Crystal in your bowl and serve!  TERRRAPINNN!
