Peach Salsa Tostadas

Recently, I have not been cooking as much as I should/want to be. Last night we made burgers, and tonight I want to cook again. Riley and I have recently been saying to one another that when we want to cook something, we should focus more on what's in our kitchen, instead of focusing on what we need to buy at the store. My cupboard is pretty much full, yet I feel as though I have no food. When I say that I have no food, I mean I have nothing that's easily ready. But that's just me being lazy. I have three different kinds of rice, different types of canned foods, nuts, pastas... I have food!! I just don't have anything fresh in my kitchen, so I assume I have no food.

I need to start planning my meals around what I do have. I recently bought these pre-made crispy tostada things in the store, then kicked myself over it immediately after because I have corn tortillas in my fridge that I could easily transform into crispy tostadas. Silly me.

Take this as a lesson: Go home, look in your fridge and cupboards, and see what you have. Then go online, type a few keywords into Google of stuff you've got at home, and guaranteed you will find recipes focusing around the big items you've already got (frozen chicken, beef, pasta, onion, etc). If you are like me and keep the essentials in your kitchen, you will only have to buy a few things.

And trust me, this isn't some incredible realization I have made for the world - I have read this countless times in countless cookbooks. Stock your kitchen with the essentials, and you'll always have something to cook, even if it's as simple as pasta.

This recipe was found on one of my favorite food blogs, Love and Lemons. Love and Lemons is run by an adorable and enviable couple named Jack and Jeanine. They have the most perfect kitchen and food blog set up - ever! This recipe is pretty simple. HINT: No cooking involved, really. 

This recipe far exceeded my expectations. Seriously, it was SO good. 

Ingredients for peach salsa:  

1/2 of a small red onion, finely chopped
Juice and zest of 2 limes
4 ripe peaches, finely chopped
1 small jalapeno, seeded and very finely chopped (or more or less if you like)
2 tablespoons chopped mint (or you could use cilantro)
salt, to taste

Directions:

1. Chop and combine all ingredients. ANNNNDDDD you're done! (Hint: Let the red onion sit in the lime juice for a few minutes while you chop up the rest of the ingredients to tone down a bit of the harsh raw onion flavor.) This is best if chilled in the refrigerator for a least 20 minutes in order for the flavors to mesh together.


Ingredients for tostadas: 

6-8 corn tortillas (2-3 people) (obviously, I took the easy way out and bought pre-made tostadas)
1 can organic black beans, drained and slightly salted
2 chopped avocados, squeezed with a little lime juice
1 head romaine lettuce, roughly chopped
Feta cheese, or cheese of your choice (I normally go with queso fresco or cotija)
Even more optional – some kind of meat if you wish

Directions:

1. Lightly fry tortillas in a pan with a bit of oil – a few minutes on each side, until crispy. Place on paper towels when they’re done and salt them. Alternatively, brush with a little bit of oil and bake them in the oven (a few minutes on each side) until crispy. The time will completely depend on what kind of tortillas you’re using, so just watch them closely.

2. In the meantime, cook beans in a small pot over low heat for roughly 5-10 minutes. 

3. Prepare toppings, and serve over tostadas.
