Meatloaf...for meat lovas

My coworker at my new job was recently talking about meatloaf, which sounded delectable to me at the time. I haven't made meatloaf in probably two years, so I knew it was time to tackle it again. But, alas, when I got home, I suddenly felt overwhelmed with things to do. As you know, I started a new job last week, so I have been in training. In case ya didn't know, new job = lots of training = lots of work and studying.

Now that I'm a big girl, I have big girl items of my list of things to do. I knew I wanted to cook meatloaf, study, and also hit the gym, but couldn't do all in one night. My roommate Alyx said that she'd take a load off of me, and make the meatloaf if I gave her the ingredients and the recipe I wanted to use. THANK GOODNESS for roommates that like you and want to help you!! As you know, we decided to start this blog together, but Alyx (see above about having a real job) doesn't have a lot of free time to write, so she has agreed to help me cook, but I will continue to do the writing.

When it comes to meatloaf, I am very traditional. I like it meaty, with lots of ketchup on top.  The recipe I used was Alton Brown's recipe from the Food Network, and I will be using it again in the future. Alton Brown is known for his knowledge in the science of cooking, and also as the main host of Iron Chef America. He has a lot of humor, but also knows his stuff and is pretty straight forward. This recipe is just like that; straight forward. If you like comfort food, you will love this recipe! ENJOY!!

As I was getting ready to leave for the gym, I made sure to get the onion, croutons, and beef all ready for Alyx, and off I went. When I got home, the house smelled delicious and I had a hot meal on the way! THANK YOU PRINCESS!



Ingredients:
6 ounces garlic-flavored croutons (I used the garlic-cheese croutons from Trader Joe's)
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot peeled and broken
4 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg

For the Glaze:
1/2 cup ketchup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce (I used Cholula)
1 tablespoon honey

Directions:
1. Heat oven to 325 degrees
2. In a food processor bowl (use a bullet or any other chopper if you don't have this), combine croutons, black pepper, cayenne pepper, chili powder, and thyme
3. Pulse until mixture is a fine texture. Place this mixture into a large bowl
 4. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed
5. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture
6. Season the meat mixture with kosher salt
7. Add the egg and combine thoroughly, but avoid squeezing the meat
8. Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray
9. Place the meatloaf in the oven, and get the glaze ready
10. Combine ketchup, cumin, Worcestershire sauce, hot pepper sauce, and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes
 11. Bake meatloaf for about 30-40 minutes more, until the meat is cooked and no longer red or pink
