Ground Turkey Lettuce Wraps

After gorging on the lasagna I made last week, I thought I'd keep it a tad bit lighter this time. Even though my family ate about half the platter the night I made it (felt like it weighed 10 pounds-something I thought to myself upon eating-"wait a minute...did I realllly just eat all of that weight in lasagna? Yes I did").

To many of my friends dismay, I have decided to cut back on complex carbohydrates for a few weeks, so I thought that this recipe would be a fabulous way to get a lot of flavor but keep it light and feelin fresh! I also was SO hungry when I got home from work today, which is typical, and I knew that this recipe can be prepped and finished in under 30 minutes. I actually was so impatient, I looked up a recipe at work to check out before I even got home.

I couldn't remember what I used the last time I made these, so I decided to go with the PF Chang's version of the Lettuce Wrap. The original recipe uses ground chicken, but ground chicken isn't very common or easy to find in stores, so I figured lean ground turkey would be fine. Ingredients:
1 head of lettuce
1 lb ground turkey (I used the 99% lean kind from Trader Joe's)
1 large onion, chopped
4 cloves of garlic
Reduced-sodium soy sauce
2 tablespoons of hoisin sauce
4 tablespoons red wine vinegar or red wine vinegar
2 bell peppers - I used red and orange
1 teaspoon Cumin
1 teaspoon chili powder
1 teaspoon garlic powder - I like garlic a lot!

Directions:
1. Rinse lettuce leaves, keeping them whole. Set aside and drain.
2. Cook turkey in a large skillet over medium heat, stirring often to break up the turkey (the leaner the turkey, the more solid it will stay, so keep working with it to break it up)

3. Add onion, bell peppers, soy sauce, hoisin sauce, vinegar, cumin, chili powder, and garlic powder. Cook until the meat is crumbled and cooked to a light brown color

4. Arrange lettuce leaves on a plate, like bowls

5. Spoon meat mixture in center. Eat like a taco and ENJOYYYYY!!!

Sriracha adds a nice little kick to it! Gotta sneak it in somewhere...
